Whatever Ya Got Brunch Skillet

HAPPY WEEKEND! It’s feeling like spring here in Chicago (kinda) & it feels SO GOOD. Walked to a dr apt, went to the park, back to the store, cleaned our patio and now time for BRUNCH. Soaking it in for everything it’s worth. While cleaning out the fridge for this darn good good skillet! 🥂 Cheers to spring (hopefully) being around the corner! Happy Saturday!

ingredients:

  • 1 sweet potato

  • 5-6 baby bellas

  • 5 pieces asparagus

  • handful baby spinach

  • chopped campari tomato

  • 2 tbsp butter

  • chipotle powder

  • @traderjoes Chili lime seasoning,

  • eggs (however many you need)

  • s&p

  • cheddar cheese & lime to garnish

how to:

  1. butter & let melt on medium. put all veggies (chopped) into the pan beside the spinach.

  2. sprinkle with chipotle powder + @traderjoes chili lime seasoning. Stir into veggies

  3. cook for 10 min & stir regularly

  4. add spinach & cook until softened / wilted

  5. make holes for each egg, and crack an egg in each

  6. sprinkle with salt & pepper and cover the pan, cook for 7-10 min on medium-low until eggs are cooked to your preference (I’m not a runny yolk guy, so I cook it all the way through!)

  7. put into bowls & add cheddar cheese+ fresh lime!
