TJ's Kale Gnocchi with Artichoke Antipasto
Alright - some serious mixed reviews on the @traderjoes kale gnocchi. That being said, I finally tried, and I think I recommend! Who doesn’t love a healthy alternative? Definitely needs to be crisped & paired with the right sauce, but I think I’m onto something here! Cut the bitter kale with a naturally sweet sauce! What To Get:
Ingredients for 2-3 Servings:
1 bag @traderjoes kale gnocchi
3 mini red peppers sliced
1/4 cup julienned sun dried tomato
1/4 cup @traderjoes artichoke antipasto
drizzle olive oil
1 teaspoon minced garlic
splash white wine - optional! feel free to skip or use a splash of veggie or chicken broth
salt & pepper
How To Make It:
lay gnocchi on a likes tray, bake at 350 for 20 min
add olive oil to a sauté pan on medium, add garlic & sauté 2 min
add peppers & sun dried tomatoes, cook until soft (3 min)
splash white wine just to deglaze the pan, let cook down 2 min
add antipasto you the pan and combine
when gnocchi is done, add to sauce, toss & sprinkle with s&p - enjoy!
