Spinach & Feta Chicken Rolls

 I love a good grocery haul, especially when it comes to focusing on all the greens & veggies, trying to formulate in my head what I wanted to do with the last 2 pieces of chicken breast I thawed from the freezer during the day. Whenever I think fresh, yet super fulfilling, but still light, I immediately think the Mediterranean / Greek route! The flavors are amazing. Ingredients are broad & you always get something delicious! Spinach & Feta Chicken Rolls w Greek Chopped Salad - DING DING DING, winner. Had to throw some Smoked Paprika Sweet Tater Discs in there too - just because. I think this will be added to the regular rotation! Cheers to formulating recipe WINNERS 🥂

Ingredients:

Ingredients for Chicken - 1 breast:

  • 1 chicken breast per person

  • ~1/4 cup feta

  • 6-8 baby spinach leaves

  • salt + pepper

  • marinade (I used @kraft_brand Greek dressing but use whatever you like!

 
 

Chopped Salad Ingredients:

  • 8 cherry tomatoes quartered

  • 1/4 large cucumber chopped

  • 1/2 cup chopped baby spinach

  • 2 tbsp fresh chopped dill

  • 1 slice red onion diced

  • 2 tbsp chopped pepperoncini pepper

  • olive oil

  • red wine vinegar

  • salt & pepper

  • lemon

  • side of tzatziki (love @traderjoeslist for lots of these ingredients)

How To:

  1. Reference photos below! butterfly chicken breasts & pound thin - if you don’t have a tenderizer use a can of beans!

  2. sprinkle w s&p - layer spinach & add feta on top

  3. roll chicken breasts & secure with toothpicks as needed - cover in marinade for 1 hour minimum

  4. preheat oven to 400 & add chicken + leftover marinade to a baking dish - bake for 20-25 min until the top starts to brown (half way through pull it out & spoon marinade over the top)

  5. chop up all of the veggies + fresh dill & put in a large bowl. Drizzle w olive oil + a dash red wine vinegar, juice of 1/2 lemon + lots of s&p! Let sit while chicken cooks

  6. remove chicken from oven & plate! Add 1 chicken roll + lots of Greek chop salad + dollop tzatziki *sweet taters optional!*

  7. serve with an extra 1/2 lemon & dill
