Stuffed Acorn Squash

Drum roll please.... Stuffed Acorn Squash is finally making its debut! I know it was a long time coming, && a long drawn out insta story - but you powered through && it’s here! But also, just wanted to note one thing, posting this to my story and walking you through it was in all realness how I cook... like measuring is too complicated, I make a mess, I eat half of what I’m cooking as I go. Nothing is perfect! && talking you through it was a little step out of my comfort zone I needed! So cheers to REALNESS & accepting nothing is perfect🥂 (accept maybe this stuffed squash....)

 

Ingredients:

Ingredients (I would say 2 servings if you serve the whole 1/2 squash as an entrees! I had leftover filling)

  • 1 acorn squash

  • 1/2 yellow onion chopped

  • 2 tbsp ish minced garlic

  • 1 can white kidney beans

  • 2 large handfuls cherry tomatoes

  • 2 large handfuls sliced baby bella mushrooms

  • ~2 cups baby spinach

  • splash white wine or broth

  • 2 tbsp butter

  • @pinehurstoliveoil butter infused olive oil (or regular if you don’t have a fancy one!)

  • dried sage & thyme

  • fresh rosemary

  • honey goat cheese

  • s&p

What To Drink, You Ask? Perfect for a cozy meal!

Earthy & Bold With Hints of Blackberry & Herbs

Vegan

 

How To Make It:

  1. preheat oven to 375, slice squash in half, scoop seeds, drizzle with olive oil, s&p - roast cut side up for 45 min

  2. with ~20 min left start your filling: over medium heat, add 2 tbsp butter to a pan & melt. Add onion + garlic + rosemary & sauté 2-3 minutes until fragrant & onion/garlic is softened

  3. add white wine or broth (1/2 cup or so) & simmer 3-4 min until combined & no more wine smell. Add in dried thyme + sage

  4. add tomatoes & mushrooms - toss in & cook until tomatoes burst (8-9 min) + add s&p

  5. add spinach & drain/rinse beans & add 1/2 can to mixture

  6. remove squash from oven - set oven to broil

  7. add filling into the open part of the squash until full & top with a large spoon of honey goat

  8. broil in the oven until goat cheese is golden - DIG IN
