Bacon Wrapped Dates

Monday - back on the clean eats & it feels GREAT. But I really haven’t stopped thinking about these little pockets of bacon love I threw together this weekend with some delicious glasses of clean crafted vino. Who doesn’t love a sweet date with some sharp & creamy blue all swaddled up in a piece of Smokey bacon? If you are thinking “not me, ew” I’m not sure I can trust you. Cheers to Monday, a new week to kick start a clean week, but never stop thinking about the weekend until we get there again! 🥂

Ingredients:

Ingredients for ~2 dozen pieces:

  • 1 pound container of medjool dates *i had leftover dates I didn’t use!*

  • 1 pound of your favorite bacon

  • crumbled blue cheese (mine is @traderjoes )

  • *if you’re a I dOnT LiKe BlUe ChZ loser, use feta or goat. Bye

How To:

  1. preheat oven to 375 & line a baking sheet

  2. halve your dates (remove the pit if they aren’t pitted!)

  3. with a spoon (or your fingers) add a little pile of blue (or your substitute cheese) into the opening in the middle where the pit used to be - repeat for all pieces

  4. slice the bacon slices in half & wrap a 1/2 piece of bacon around each cheese stuffed date

  5. on your lined baking sheet (please line them - such an easier cleanup, make your life EASIER) place the bacon wrapped loves & cook for 30 minutes until the bacon crisps *could be longer or shorter based on your oven!*

  6. once they are finished, let cool for 5-10 mins, they will be HOT from the oil on the outside all the way to the cheesy core.

  7. serve & enjoy! You can keep leftovers in the fridge and heat them up if needed!
