Spicy Teriyaki Chicken Tacos
Happy H U M P D A Y! Half way through & we’re almost there to the weekend. A long weekend. MDW more specifically! I’m so ready to kick off summer & last nights tacos... if summer was a taco.. tasted like it. You need Spicy Teriyaki Chicken Tacos w/ Grilled Pineapple Pico. Reread that, need. I mean it doesnt get more fresh & summery than pineapple pico... Cheers to the taste of summer! 🥂
ingredients:
2 chicken breasts
1/2 red onion
@bourbonbarrelfoods spicy teriyaki (or your fave!)
3 large slices pineapple
3-4 baby radishes
3 mini sweet bell peppers (or 1/2 large)
1/2 shallot
juice of 1/2 lime
juice of 1/2 orange
@traderjoes chili-like seasoning
fresh cilantro
taco shells or greens
avocado + jalapeño for garnish
how to chicken:
Add both chicken breasts + 1/2 chopped red onion to the crockpot
Top with your teriyaki sauce & cook on low for 4 hours or high for 2
Shred with a fork toward the end
how to pineapple pico:
*do this once you get the chicken in the crockpot! You want it to marinate all flavors!
🍍coat your pineapple pieces in chili lime (you can use plain chili powder if you don’t have! It makes AMAZING FLAVOR). Place on your regular grill (or stovetop) for about 3 min each side to get grill marks
let cool - slice radishes + bell pepper + shallot into tiny pieces (remember this is a salsa!) & add to bowl
cut pineapple of the core and dice in small pieces & add with LOTS of chopped cilantro
add juices of lime & orange - toss! Let sit and marinate for as long as possible
cut your garnish avo & jalapeño (if you like)
grab you taco shells or greens & build these things! Chicken + Pico + garnish - E N J O Y
