Spaghetti Squash A La Vodka

Well sadly Instagram was not on my side today & this Monday pick me up recipe was stuck “pending” all day! #sad I was so excited to share this healthy & satisfying plate of goodness - oh well! Doing my best over here! Monday pick me up meal + Monday much needed glass of vino made for a happy me & that was what mattered! Cheers to Monday pick me ups, & keeping that body & soul of yours happy! 🥂

ingredients:

Sauce is good for 1 lb pasta or large spaghetti squash: ~4-6 servings

  • 1 medium spaghetti squash

  • 2 chicken breasts (optional or swap for your fave protein!)

  • 2 6 oz cans tomato paste

  • 24 oz 1/2&1/2 (or do 1/2 milk of any kind + 1/2 broth for lighter version!)

  • olive oil

  • butter

  • minced garlic

  • vodka

  • oregano

  • parsley

  • crushed red pepper

  • basil

  • S&P + parm to garnish

how to:

  1. preheat oven to 400& line baking sheet. Slice squash in half & remove seeds with a spoon. Drizzle the top with olive oil + s&p. Bake for 40 min open side down

  2. in a large pan on medium, add 2 tap butter + drizzle olive oil. Melt butter & add large spoon garlic. Salt & pepper your chicken breasts while it sautés

  3. add chicken & sear on both sides until golden (~4 min/side) and remove from pan, set aside

  4. in same pan (don’t clean) deglaze with vodka (2-3oz)

  5. add both cans tomato paste and stir to combine with liquid in the pan. Season heavily with your herbs

  6. slowly stir in 1/2&1/2 (or milk +broth) until a bright color and fully combined/creamy

  7. slice chicken & add back in to the pan, cover & let simmer ~20 or so min **this is a great time to re season if needed! Taste throughout!

  8. remove squash & carefully shred with a fork

  9. pile your squash on a plate & top with hot sauce + chicken + fresh parm + herbs if you have! Enjoy with your Dove Dog Hunt @scoutandcellar Pinot Noir 🍷
