Soy Ginger Noodle Bowl

Fun fact about me - I do NOT like Chinese food. I never have. I’m really sorry - I just don’t. People find this statement offensive (cough Peter) but truly it does nothing for me. Off that topic & onto the next, I love creating some sauces on my own to play with some Asian inspired dishes! This Soy Ginger Noodle Bowl does the trick, I wouldn’t let you down here. I found some MAJOR life changing ingredients from @thrivemarket for this, too! Kick the takeout, and make this version, it’s delicious, & you won’t feel like 💩 from takeout Chinese sauces! Cheers to being better than takeout! (I mean, there are also times takeout is 100% necessary so don’t @ me)🥂

ingredients:

*Perfect for 2 servings!

  • @thrivemarket Wonder Noodles (you can find similar ones in @wholefoods or @marianosmarket)

  • Sesame Oil - this one is @traderjoes

  • 1 tablespoon @the_ginger_people (fresh ginger is fine! You'll have to finely chop or grate at home)

  • 2 tablespoons Chopped Garlic

  • 1/2 Cup Soy Sauce add more to thin out if needed!

  • Sriracha - to your spice liking!

  • 1 Teaspoon Flour to thicken

  • Veggie Medley of Choice - mine is broccoli + zucchini + shredded carrot + Baby Bella Mushrooms

  • Sesame Seeds to top 

how to:

  1. in a saucepan add 2 tbsp sesame oil and heat on medium

  2. add 1 tbsp ginger & 1 tbsp chopped garlic let heat until fragrant

  3. add 1/2 cup soy sauce

  4. 1 tsp flour to thicken. Let simmer for 2-3 min, sauce will thicken

  5. Add chopped veggies, cook until soft

  6. add good squeeze of sriracha (to your liking)

  7. rinse & drain noodles & add for 2-3 min to heat through all the way and stir into the veggies

  8. top with sesame seeds & enjoy!
