Smokey Sweet Potato Bisque

Got back from a snowy vacation to spring like weather in Chicago! Does this mean it’s on its way? Because I’d be really happy if so! Anyways - had a bag of @traderjoes mini sweet potatoes & some coconut milk in the pantry which are random but kinda all I have. Spring is coming but why not take advantage of soup szn while it’s here? Creamy, Smokey, spicy & a hint of sweet! This Sweet Potato Bisque covers all bases. AND for those of you who this concerns - dairy free! AND DOG APPROVED! Cheers to SPRING BEING ON THE HORIZON 🥂🌞 but for now - soup szn.

ingredients:

(4-6 servings)

  • 5-6 mini sweet potatoes ( @traderjoes )

  • 2 cans @thrivemarket coconut milk

  • 1 16oz carton veggie broth

  • 2 tablespoons garlic 3 tablespoons olive oil

  • 1 tablespoon smoked paprika

  • 1 tsp chili powder

  • 1 tsp chipotle powder

  • sprinkle cinnamon

  • s&p

how to:

  1. chop sweet potatoes into small pieces - roast with olive oil + spices at 400 for 20 min

  2. in a sauce pan on low/medium heat, add drizzle of olive oil + garlic. Sauté until fragrant

  3. remove potatoes from the oven and add to sauce pan, combine thoroughly

  4. add 2 cans of coconut milk & combine

  5. carefully blend in batches and return to the pan

  6. add desired amount of broth (to your thickness preference!) I used about half the container!

  7. stir thoroughly until simmering & add a dash cinnamon + s&p to taste!

  8. serve with a dash chili powder!
