Healthified Kale Caesar

Raise your hand if you don’t like a good Caesar Salad. Oh, no one? That’s what’s I THOUGH. Such a classic, let’s be honest. One of those you know isn’t really the healthy salad but dang that creamy dressing with crispy croutons - okay I’m drooling. This is my FAVORITE healthified version - it fills all the Caesar salad needs you might be experiencing. I promise. From my homemade Lemon Basil Caesar Dressing all the way down to the @whispssnacks croutons. You’ll never turn it down. Cheers to a good (healthified) Caesar Salad 🥂

 
 

salad ingredients:

  • organic kale (I bought the bunch & chopped fresh!)

  • handful shredded carrots

  • orange grape tomatoes (I always get different colors! They look pretty & I love tomatoes)

  • 1/4 English (or plain) cucumber

  • 1/4 ish cup chopped red onion

  • a drizzle olive oil to massage the kale

  • @whispssnacks for croutons (I ❤️ the parmesan or Asiago!)

dressing ingredients:

  • 6-8 large basil leaves

  • juice of 1 lemon

  • 1 large close of fresh garlic

  • 1 5.3 oz plain Greek yogurt (mine is fat free but 2% or whole milk Greek yogurt is fine!)

  • dash of Worcestershire sauce

  • 1 tsp ish of Dijon mustard

  • 1/2 cup grated Parmesan

  • 1/4 cup olive oil

  • salt & lots of pepper

  • *water to thin as needed to desired consistency*

how to:

  1. chop kale & place in a large bowl. Massage w drizzle of olive oil - set aside

  2. chop up the rest of your veggies and sprinkle them atop the kale

  3. blend all ingredients of the dressing together - add olive oil or water to help thin as needed!

  4. add your @whispssnacks croutons on top & drizzle with your delicious dressing & maybe a fresh squeeze of lemon if you so desire!

🥬you can always add your favorite protein too! I love a classic grilled chicken, but some crispy roasted chickpeas (I have a previous recipe!), shrimp, steak, fish - you name it you can add!
