Prosciutto Wrapped Chicken

Something rich and savory, yet salty and slightly smokey- PROSCIUTTO WRAPPED CHICKEN. Sign yourself up to indulge but not feel totally guilty, you deserve it. I love being able to bring different flavors together to make one piece of blended deliciousness. Sounds fancy and looks fancy probably with those herbs on the plate - but you can make it too! ingredients:

  • prosciutto slices (my favorite is @traderjoes)

  • boneless skinless chicken breast (you can use thighs if you prefer! I like white meat!)

  • crumbled goat cheese (also using TJ!)

  • ricotta cheese - skim or whole milk!

  • lemon +garlic

  • salt and pepper

  • EVOO

  • fresh thyme sprigs

  • cherry tomatoes

how to:

  1. preheat the oven to 375

  2. butterfly cut the chicken breast keeping connected on one side - season with salt and pepper on both sides

  3. in a bowl, mix ~3/4 cup of ricotta + 1/2 cup goat cheese + 1 close garlic + juice of one lemon + 3-4 sprigs fresh thyme

  4. stuff a healthy spoon full of the cheese mixture into each chicken breast, fold over to enclose the mixture

  5. wrap each chicken breast with 1-2 slices of prosciutto (depending on size!)

  6. oil a baking dish (I use my @corningware oval dish!) and line wrapped chicken breasts on 1 level

  7. quarter campari tomatoes (or cherry or grape!) and top the chicken along with fresh sprigs of thyme

  8. cook for ~40 minutes until prosciutto is crisp!
