Sage Butter & Squash Cauli Gnocchi

Winter is here and so is the comfort food that goes with it! This cauli gnocchi is SO delicious. SO simple. SO satisfying. @traderjoes cauli gnocchi is perfect for any occasion! And honestly- It’s always as good as the real thing! Cheers to straight faking it 🥂🤷‍♀️ it’s all healthy right?

ingredients:

  • acorn squash + @traderjoes cauli gnocchi

  • butter

  • sage

  • garlic salt

  • salt

  • pepper

  • parm cheese

how to:

  1. half and seed acorn squash - remove peel and cube. Put in oven at 375 seasoned with olive oil, salt, pepper, and garlic salt

  2. prep @traderjoes cauli gnocchi. Parchment paper line a tray and add a bag of gnocchi. Toss in olive oil and bake for last 15 min of the squash

  3. after adding gnocchi - melt butter in a pan on LOW. As it melts add fresh sage leaves. Butter will brown and leaves will crisp!

  4. remove crisp sage leaves and add cooked squash and gnocchi.

  5. toss squash and gnocchi in browned sage butter and plate!

  6. top with fresh parm and ENJOY!
