Herby Smashed Sweet Potatoes
Day 1 of Winter Pairings is here in a big way! Who doesn’t love warm and cozy food to go along with a big glass of vino? And a Christmas movie perhaps? Putting together this series to set the tone for a cozy yet delicious winter & maybe some holiday ideas! Fill that glass up & get going on this favorite side dish. Ingredients:
For 12 Pieces (~2 per person if using mini sweet potatoes!)
4-6 sweet potatoes (I used 6 minis from Trader Joes)
3-4 tbsp butter
fresh rosemary sprigs (dried will work if needed!)
2 tbsp minced garlic
grated parmesan cheese
S&P
**want to make them vegan?! Use ghee as a sub for butter & nutritional yeast as a sub for the parm!
How To:
Slice sweet potatoes in half & width wise so you have 2 “cone” shape pieces per potato
Add potatoes to a pot of salted water, bring to a boil & boil for 20-30 minutes poking with a fork until tender
Strain potatoes! Stand the pieces up on a flat surface & “smash” them into patty like shapes
In you cast iron skillet ( or large saute pan) add 3-4 tbs butter & melt, once melted add garlic + 2-3 rosemary sprigs
Cook “smashed potatoes~4 mins each side until crispy
Remove from the stove, sprinkle with fresh parmesan cheese, pepper & additional rosemary
