Autumn Roasted Vegetable Salad

Over the years, I have made a commitment to being more aware of what is going into my body. Don’t misread, I TOTALLY indulge & balance in those irresistible “unhealthy” faves in moderation! However, when you focus on wholesome foods, I have come to realize how satisfying HEALTHY meals can be! It isn’t tough to eat veggies if you make them taste good! This Autumn Veggie Salad does just that! Who’s with me on committing to cleaner eating, in moderation of course! Because I mean, patsa.. and WINE (which I have cleaned up too!). Cheers to appreciating healthy foods & ENJOYING them!

Ingredients:
 

Bulk this up for a crowd, or make a single serving!

  • A base - I chose baby spinach! Kale is great, too!

  • Choose your veggies, I went with tri color carrots, cauliflower, brussel sprouts, delicata squash - sweet potatoes, parsnip, broccoli would all be great, too! (try to pick things that cook in similar time!)

  • Dried cranberries

  • Toasted pepitas (or any nut or crouton for crunch!)

  • Olive oil

  • 4-6 fresh garlic cloves

  • I made my dressing! 1/3 cup olive oil, a little pour champagne vinegar, juice of 1 orange, 1 tbsp pure maple syrup, small scoop greek yogurt (skip if you don’t want a creamy dressing!), small squeeze of dijon mustard. fresh cracked sea salt & pepper - just blend or shake in a jar!

 
 
How To:
  1. Preheat your oven to 375 - line a large baking sheet with parchment paper

  2. Chop veggies as needed! For the squash, slice in half & remove seeds, slice into small pieces. For brussels, cut of the stem & half them.

  3. Drizzle all veggies with a good amount of olive oil & add full garlic cloves to the baking sheet spread out throughout the veggies & sprinkle heavily with fresh salt & pepper

  4. Roast the veggies for 35-40 minutes (I like a char!), checking in about half way & tossing

  5. While the veggies roast, make that dressing! **REMOVE the garlic from the baking sheet half way & use it in the dressing for extra flavor! Add all ingredients into your blender OR shake in a small jar - set aside

  6. Remove veggies from the oven, let cool for a moment

  7. Fill your bowl with a green base (or a rice bowl would be awesome, too!) and top with your freshly roasted veggies

  8. Add your pepitas for crunch & cranberries for a hint of sweet

  9. Drizzle with dressing & enjoy!
