Vegan Goddess Veggie Bowl
I owe my sister all the credit here for the brussel sprouts - bout to praise her again for the inspo on this Green (very green) Goddess Bowl! Packed with veggies, flavor, protein - what else could you need to fuel your day? My sister is a nurse (way cooler than me) and has been crushing the veggie bowl game - although I made my own little tweaks, I think she might approve (except maybe the mushrooms). Plus- for all of you out there, it’s Vegan! 🌱 Cheers to big bowls of goodness to fuel your day, and my sis 🥂
Ingredient Inspiration
The beauty of recipes like this, is you can use both your imagination & what is in your fridge! Or, even your pantry! Also, this one is an A+ if you are looking for a great meal prep option! Not vegan or veg? Add your favorite (non veg) protein a top!
For the Brussel sprouts: slice stems, then slice in 1/2, toss with avo oil + garlic powder + s&p - air fry at 400 for 20 min until crisp. Then in a sauté pan, add 1 chopped shallot with avo oil or ghee for 3 mins, deglaze with a splash of red wine vinegar & toss Brussel sprouts in the mixture + add sprinkle nutritional yeast (add parm chz if not vegan!)
Drain rinse & dry garbanzo beans, season as you like! I did avo oil + paprika + s&p. Air fry for 10 mins at 400
For broccoli & mushrooms (+ taters and zucchini if using!) - toss in avo oil, garlic powder, red pepper flake, s&p & roast in the oven until crisp (25 min or so)
Build up your bowl! I wilted my kale with goddess dressing + topped with fresh parsley & avo just because I had them!
