Lemon & EBTB White Bean Cauli Toast

Making small bites & snacks healthy & wholesome is not always the easiest task! But think about it, simple ingredients in & of themselves are better for you. Why not make something SUPER simple, from scratch (I know, this is scary) but insanely satisfying. Make it a snack, make it brunch, but focus on whole ingredients that make you feel good! Healthy brunch anyone? Don’t forget the bubbly! Check that pantry, I know there is something there! Cheers to simple & wholesome creations 🥂

Ingredients:

  • 2 cauli thins (or your fave toast!)

  • 1/3 cup white beans, juice of 1 lemon

  • baby arugula (or any micro greens!)

  • mozzarella cheese

  • feel free to swap or add an egg for brunch! && don’t forget the clean crafted bubbly!

  • tomatoes

  • everything but the bagel seasoning

  • fresh pepper

  • balsamic glaze to top (not pictured!)

3 Ingredient White Bean Hummus

Great as dip with crackers or veggie sticks!

 

How To:

  1. toast your toast! Or cauli thins - I just put my oven to 350 and toasted until crisp ~4 min a side

  2. while the toast... toasts - add beans + lemon juice to a bowl & mash with a fork, top with EBTB. If cooking your egg, now is the time, too!

  3. remove toast from oven - smear white bean hummus on each & top with arugula + mozz + tomatoes + black pepper + balsamic glaze

  4. look up at the sun, smile, and DIG IN!

  5. Always have the bubbly on hand
