Basil & Roasted Red Pepper Tofu Bowls

People turn their noses as vegetarian dishes most of the time (when they are not veg), but the thing is, they can be INCREDIBLE. Using the right flavors & ingredients for something filling & meat free isn’t as tough as you think! This year, I have made a conscious effort to eat more veggie based meals & meatless protein. No, I am not a vegetarian, but I can feel the difference in my body when I eat certain things! Looking to kick off the New Year full of flavor, with a little more veggies? This one’s for you. Ingredients

  • 1 block @traderjoes EXTRA FIRM tofu (or any other brand!) you will need about 1/5 the block per bowl

  • 1 large portobello mushroom top

  • handful broccoli

  • shredded carrot

  • rice or cauli rice

  • 1 cup fresh basil

  • 1 roasted red pepper (mine is jarred from @traderjoes )

  • 1/3 cup olive oil

  • 3 tsp minced garlic, salt & pepper

  • **optional! 1/3 cup parm cheese OR add nutritional yeast for a creamier sauce!

Looking for something else to use the sauce with? Add it to your favorite pasta, hot or cold! Fettucine is a favorite warm, but always great on a cold pasta salad!

How To:

  1. in blender or food processor, add basil + roasted pepper + olive oil + s&p for the sauce, place in a bowl or jar in the fridge up to 1 week

  2. remove tofu from package, wrap in a dish towel & top with something heavy (I used my cast iron!) to remove all liquid

  3. cube tofu & add basil red pepper sauce & marinate

  4. slice portobello mushroom - toss with the broccoli in olive oil + s&p + garlic + optional balsamic vinegar

  5. heat cast iron skillet to medium high, add tofu and cook for 10/15 min

  6. preheat oven for 375, add broccoli & mushrooms to a lined sheet

  7. add tofu & veggies to oven for 30-35 minutes (tofu will brown and crisp!)

  8. cook your rice (I just microwaved TJ frozen Cauli rice!) in the last few mins the veg and tofu cooks

  9. build your bowl! Top with extra fresh basil & red pepper sauce!
