Everything But The Bagel Buffalo Tofu Tenders
So if you have been following along the last few weeks (or if you haven’t, welcome!) I have been playing with tofu a bit! I’m not a vegetarian or vegan, but I’m all about a good meatless protein! I’m a huge fan of the classic chicken tendie, so anytime I have the opportunity to recreate a fun version of something similar, I take it! The Buffalo Tofu Tendies with @everything_but_the_bagel crunchy coat were top notch. Trying to switch up the protein a bit? These are ITTTTTTT. Cheers to switching it up 🥂 PS - these are a GREAT game day dish! Even the non-veg will love them!
What You Need:
Ingredients for 12 tendies:
1 14 oz package organic extra firm tofu (mine is @traderjoes )
your fave buffalo sauce (I use @franksredhot buffalo or Primal Kitchen from Thrive Market!)
@everything_but_the_bagel (bread crumbs or panko work too!)
drizzle olive oil
**optional to serve with baby carrots 🥕 & your favorite dip! My go to is @bolthousefarms blue cheese!
Directions:
remove tofu from the packaging & wrap in a dish towel, let on the counter with a heavy book or pan on top (I used my cast iron) to get all the liquid out
slice tofu into “tender” like shapes (more like mozz stick shape) - add them to a baggie or container & cover them with buffalo sauce. Let sit minimum 1 hour (they soak up all the sauce!)
in a bowl, add a good amount of @everything_but_the_bagel and roll each piece to coat fully on each side, place on a baking sheet with parchment paper or greased with oil
lightly drizzle with olive oil (this helps crisp!) & bake in the oven at 425 for ~ 50 minutes, I flipped half way to crisp both sides! Feel free to do longer if your oven needs the extra time!
let them sit for a minute or two once done & serve them up with your 🥕 & @bolthousefarms blue cheese or ranch!
