"Dressed Up" Burrata & Homemade Crostini
More burrata, please! Dressed up my favorite app (burrata, obvi) last night with some simple ingredients & homemade garlic toasts from a loaf of frozen Italian bread I had! Again, you can use jarred sweet roasted red peppers or just jarred sun dried tomatoes in oil! I love to rehydrate the dried julienne sundried tomatoes from @traderjoes in sauces or as toppings! I also wouldn’t have minded some caramelized mushrooms or onions? Anyone? Welp, since quarantine calories don’t count - treat yo’self! Cheers to negative quarantine calories 🥂
What I used for my “dressing” for dressed up burrata: drizzle olive oil, 1 decent spoonful of minced garlic, a spoonful of @campodoro_sas red pepper pesto, @gourmetgarden basil, S&P. Topped with @traderjoes balsamic glaze!
directions:
on medium heat, add olive oil and garlic to the pan, let cook until fragrant (2 min or so)
add pesto + basil and combine all ingredients until smooth
add a heap of the sundried tomatoes and cook until soft! 5 min or so & let cool
once cool add the baby @belgioiosocheese burrata on top + drizzle with @traderjoes balsamic glaze
for the garlic toast:
Thinly slice Italian or French bread, place on a baking sheet.
Drizzle all with olive oil generously (helps with the golden color & crisp!) + sprinkle with granulated garlic.
Bake in the oven on 375 for about 10 min until they start to turn golden! Serve with your dressed up burrata!
