Crispy Potato Discs & Herby Goat Cheese Dip
Football SZN is one of my faves! Thursday nights, Sunday Fundays - you name it! Also some of my favorite times to host friends & do a big smorgasbord of all the things! Plus, great way to clean out a fridge! Chips & dip is of course a classic, but why not class it up a bit? Sea Salt & Garlic Potato Discs + Whipped Herby Goat Cheese will end up being a regular on your game day lineup. Mark my words! Pair with my favorite Sauvignon Blanc! How To:
slice potatoes into discs & lay on a baking sheet over 1 layer. Drizzle with olive oil + lots of sea salt + sprinkle garlic powder, & dried parsley- bake on 400 for 25 min flipping halfway (or until golden brown!)
while taters cook, take your 4 oz goat cheese + ricotta + 2-3 chopped green onions + 2 garlic cloves + handful fresh parsley + dried parsley, oregano + lemon & place in the food processor. Process until it is a creamy consistency - TASTE! Add more of what you like! Remix
place the cheese mixture in a bowl, top with fresh green onions & serve with your potato discs! GAME ON.
