Chicken Enchiladas

What a fiesta today has been! Lol not really, but at least the night time was(?) I have had all the things for these amazing enchiladas & naturally put it off - but seriously I couldn’t wait anymore! The chicken is SO tender and the @fronterafoods enchilada sauce blows these babies out of the water! (So Happy I found both green & red on @thrivemarket ) Honestly so simple, but SO full of amazing flavor. Amp up your taco Tuesday (or Wednesday) with these easy enchiladas! But give yourself a night to marinate the chicken 😉 and have a marg on the side. 🤷‍♀️Cheers to big flavor & simple ingredients! 🥂

ingredients:

2 batches (can feed 6-8!)

  • 2 Boneless, Skinless Chicken Breast +Fresh Cilantro (1 cup chopped)

  • Shredded Sharp Cheddar (or other cheese of choice!) this is @traderjoes Mexican style

  • Flour Tortillas (flour work better! But if you need to use corn- they work!) using @missionfoodsus

  • @fronterafoods Enchilada Sauce - Red & Green!

  • Olive Oil

  • Salt&Pepper

  • Fresh Jalapeños

directions:

  1. overnight, marinate chicken breasts in olive oil + chopped cilantro + s&p (alternate chicken with black beans or pinto beans + cilantro!)

  2. at 375- bake for 35 min, remove from the oven and shred!

  3. line bottom of casserole dish with 1/2 packet of @fronterafoods green enchilada sauce & half in shredded chicken

  4. equality fill tortillas with shredded chicken + small handful cheese, roll & line across dish

  5. top full layer of enchiladas with red @fronterafoods red sauce followed by cheese

  6. bake on 375 until melted (~6 min) & then broil on high for 3-4 min to brown

  7. too with fresh cilantro & jalapeño! Any other toppings welcome!
