Cauli & Kale Gnocchi Skillet

Savory meets rich, meets cheesy, meets post wisdom teeth eats, meets @traderjoes cauli & kale gnocchi, all in ONE SKILLET. How about that? Finding something that is delicious but also not soup or smoothies has been tough, but since I have been on the up & up I was looking to make a serious upgrade to soft foods. Then came this beauty in a @lodgecastiron skillet. Feed up to 4, clean one dish, talk about a deal for you & your guests! && if you are ANYTHING like me, you’ll always have a beautiful glass of vino at hand while whipping it up. Ingredients

For 3-4 Servings

  • 1 bag @traderjoes frozen cauli gnocchi

  • 1 bag @traderjoes frozen kale gnocchi

    ** or just use 2 bags of the same!

  • 2 tablespoons butter

  • 3-4 garlic cloves - minced

  • 4 oz baby bella mushrooms (5-6 is what I used)

  • 1/2-2/3 cup half & half

  • 1/4 cup ricotta cheese

  • sprinkl cup parmesan cheese

  • 1/4 cup @traderjoes cave aged blue cheese (or just use more parm!)

  • splash dry white wine (or broth!)

  • lots of fresh pepper

  • dried thyme & parsley

  • 2-3 slices @creminelli prosciutto to top

How To:

  1. preheat oven to 400 degrees

  2. line a baking sheet with parchment paper & lay 1 bag of cauli gnocchi & kale gnocchi on the sheet, ensure all are unattached to each other & drizzle with olive oil

  3. bake gnocchi in the oven for 20 minutes until they lightly brown (this is so they don’t get gummy!)

  4. while gnocchi bake, in your cast iron skillet (or regular large pan), melt down 2 tbsp butter, once melted add garlic & let cook 2-3 minutes

  5. slice mushrooms thin & add to butter garlic mixture, let soften for 2 minutes or so

  6. add ~1/4 cup half & half, bring to a simmer stirring often, once at a simmer add your ricotta & parmesan, fold it in lightly (if it gets too thick, add more half & half or wine/broth)

  7. add in about 1/4 cup of cave aged blue, this makes the flavour so savory! Skip the blue if you hate it & just use parm! Let that melt in stirring regularly.

  8. deglaze the pan with white wine (just about 1/4 cup) bring to a simmer, season with a lot of fresh black pepper + dried thyme + parsley

  9. remove the gnocchi from the oven & add to your pan with the sauce. Toss to coat everything evenly

  10. top with fresh crumbled blue & sliced prosciutto - broil for 5-6 minutes on high until the cheese bubbles, top slightly browns & prosciutto is crisp! skip the prosciutto if you need!
